Coconut Fudge:I love it



Healthy Coconut Fudge:

Coconut oil, melted
Unsweetened coconut flakes
Cocoa Powder, Optional (organic is best)
Raisins or chopped dates (or both)
Unsweetened Peanut or almond butter (optional)
Stevia or Coconut Palm sugar (both are good for you, contain nutrients and don't feed the yeast in your digestive system)

Add whatever you like or have on hand:
sunflower seeds
pumpkin seeds
chia seeds
Hemp seeds (great source of protein and Omega 3)
Ground flax seed (great source of Omega 3 and fiber)
Sesame seeds
dried unsweetened fruit
Nuts

Melt the coconut oil and then add whatever you like to taste. Stir until mixed well and either drop in mounds like cookies or spread out in a pan that will fit in the fridge. Just make sure it's not too thick, or it will be harder to eat until it melts a bit. It's OK to taste it and see if it needs salt or more sweetener. I like to add tiny bits of chipotle pepper to add some sass, but if you're also making it for kids, add ingredients they will like.


Cool it in the fridge for about 15 minutes then cut it or break it apart and transfer to a container to store in the fridge or freezer. It's ready to eat in a few minutes, but needs to be eaten within an hour or it melts and falls apart. If it's not sweet enough, or too chocolatey, you can melt it down and add something else. It adds bunches of fiber to your diet and is VERY good for you. Google the benefits of coconut oil to find out more.
